Fish Pickle

The recipe I got from Deepann's site and its a good and easy recipe...


Method:-
Any type of fish with flesh – 500 g
Turmeric Powder – 1/2 tsp
Red Chilly powder -1 tsp
Salt – 1 tsp
Marinate the fish with Chilly pdr, Turmeric Pdr and salt. Keep in the refrigerator for 30 minutes and fry it till it becomes crispy.


Ginger – 2 inch piece - sliced
Garlic – 4 pods - sliced
Green Chillies - 5
Red Chilly Powder - 2 tbsp
Vinegar – 1/2 cup
Curry leaves
Mustard Seeds
Salt
Oil
In the same pan where the fish is fried, add little more oil if needed. 
When the oil becomes hot, splutter mustard seeds. 
Add Ginger, Garlic and green chillies and saute. 
Mix the red chilly powder with 2,3 tbsp of vinegar to make a chilly paste. 
Add this chilly paste to the oil and mix for some time. 
Add the rest of the vinegar and salt and allow it to boil.
Add the fried fish pieces.
Simmer it for another 5 minutes.

Chettinad chicken curry


This recipe also I got from Maria's menu and  it is a super recipe. 

I made a little changes in the method.... 

How I Made:-


Chicken – 1 kg – cut into small pieces.

Grated coconut – 1 1/2 cup
Fennel seeds (perumjeerakam) – 1 tsp
Coriander seeds – 1 tsp
Jeera – 1/2 tsp
Red chilli (whole) – 6-8
Cinnamon stick – 1 medium size piece
Cardamom – 4
Cloves – 3
Star anise – 1/2

Heat little oil in a pan, add the grated coconut and fry for a while. Add the other ingredients and fry till it becomes golden brown. Grind it without adding water.

Onion- 2 - sliced
Ginger - 2 inch piece crushed
Garlic crushed – 4 Nos
Tomato – 2 – cut into small cubes

Turmeric powder – 1/2 tsp
Chili powder – 1 tsp

Lemon – ½ piece
Curry leaves
Salt

 Heat oil in a pan, add the onion, ginger and garlic and fry till golden brown. Add chilli powder and turmeric powder and fry till the raw smell goes. Add the tomatoes and curry leaf and mix well. Add the coconut mixture. Mix it well and fry for some time. Add the chicken piece and stir till the chicken is mixed with the masala. Add lemon juice and 1 cup water. Close the lid and cook on small flame till the chicken is done.




It's a nice combination with any type of rice.....




Chinese Chicken Friedrice



How I Made:-

Rice - 1 cup
Water - 1 1/2 cup

Soak the rice for 30 minutes and then wash and drain it. 
Boil 1 1/2 cup water and add the rice on it. 
Add enough salt and cook till all the water is absorbed.
Close the lid of the vessel and keep some weight on top of the lid, and allow the rice to get cooked on vapour for some time.

Boneless chicken - cut into small pieces - 1/2 cup
Egg - 2
Onion - 1
Spring onion - chopped - 3 tbsp
Soy Sauce - 1 tbsp
Pepper powder - 1 tbsp
butter/ghee - 2 tbsp

Heat oil in  a pan and fry the chicken pieces till it is properly cooked. Keep it aside.
Scramble the eggs, and keep aside.
Cut the onion into small pieces and fry it in the same oil till it becomes transparent. Remove and set aside.

In the same pan heat the butter/ghee and add the boiled rice. Carefully fry it for 1 minute. Add the pepper powder, salt  and soy sauce. Add the fried chicken, scrambled eggs, onion and chopped spring onions and mix thoroughly.

Garnish with spring onions.

Steamed Chocolate Cake


This cake recipe I got from divyascookbook. Originally it is a Lakshmi Nair recipe.

How to Prepare:-
Milk – 1 cup
Vinegar – 1 tbsp
First you have to make the sour milk. For that add the vinegar to milk and mix well with a spoon,keep it for 15 minutes.


Egg – 1
Melted butter/ghee – 1 tsp
Vanilla essence – 1 tsp


Cocoa powder – 4 tbsp
Powdered sugar – 1 cup
Baking powder – 1/2 tsp
Baking soda – 1/2 tsp
Salt – a pinch
Maida – 1 cup


Beat powdered sugar, egg, essence and melted butter/ghee.Add cocoa,baking powder,baking soda and salt and beat again. 


Add maida and the sour milk alternately and mix till it become a smooth batter without lumps.


Pour on a baking dish / greased pan and steam the cake for 45 minutes.

Keep the cake in the pan till it is completely cool and then take it out. Decorate according to your choice..



My topping was 3tsp "Complan" powder mixed with 1tsp cocoa powder and 2tsp butter. A way to make my kids eat complan :)

Instant Sausage Roll


Sausages - 4
Puff Pastry sheets - 4 - cut into square pieces 


First grill / fry the sausages till it is cooked. Cover it using the Pastry sheets. Again fry it till it becomes brown.




Note:- It absorbs a lot of oil if you fry. 

Mixed Vegetable Kuruma





Mixed vegetable curry from Nitubala's site. 




Ingrediants:-
  1. Mixed Vegetables (Potato, Cauliflower, Peas, Mushroom, Carrot etc) - 2 cup
  2. Onion - 1 chopped
  3. Ginger - 1 inch piece crushed 
  4. Garlic - 2 pods crushed
  5. Green Chilly - 2 cut into big pieces
  6. Tomato - 1 cut into small pieces
  7. Jeera powder/seeds - 1 tsp
  8. Sambar Powder - 1 1/2 tsp
  9. Corainder Powder - 1/2 tsp
  10. Garam Masala - 1/2 tsp
  11. Tamarind/Puli - Juice of a small gooseberry sized ball
Method:-
  1. Heat little oil in a pan and fry the coconut till light brown. Keep aside till it becomes cool and grind to a fine paste.
  2. In the same pan add oil again and pop the mustard seeds. Add the onion and ginger-garlic and fry till the raw smell goes. Add Corainder powder, Sambar Powder,Jeera & Garam Masala and fry.
  3. Add the tomato and tamarind juice. Mix well with the masala and add the mixed vegetables. Fry it well with the masala. Add 2 cups of water. Keep the lid closed and allow the vegetables to cook properly.
  4. Once the vegetables are cooked, add the coconut paste and garam masala. Cook till the gravy becomes thick.
  5. Garnish with curry leaves.

This curry is goes well with chappathi and porotta...
